This breakfast jar layers all the good stuff – a coconut chia pudding, acai smoothie, and granola! Acai is an Amazonian superfood that has benefits like reducing cholesterol levels, fighting the free radicals that damage our immune system, and improving skin health. If you don’t have any acai powder on hand, you can still enjoy the smoothie component by simply omitting it from the recipe!
Prep Time: 10-15 minutes
Cook Time: 5 minutes

¼ cup chia seeds
1 cup non-dairy milk
½ tsp vanilla extract
1 tbsp desiccated coconut
1 tbsp acai powder
1 frozen banana
1/3 cup coconut water
½ cup frozen mixed berries
½ cup of your favourite granola/muesli
- Mix all chia ingredients together and leave to set for 20 mins minimum. You can also use half hot water, half non-dairy milk to make the setting time faster.
- Place all smoothie ingredients into a blender and blend until smooth. Add more coconut water if you would like a more runny consistency, or more frozen fruit to make it thicker.
3. Layer the chia pudding, smoothie, and granola in a jar. Serve and enjoy!
