Delish Chocolate Cupcakes with Vanilla Frosting

Cake is the way to anyone’s heart – so no matter if you’re trying to woo a special someone this Valentines Day, treating your BFF or just spreading the love around your workplace, these Chocolate Cupcakes with Vanilla Frosting will give everyone the warm and fuzzies!

  • ½ cup cacao powder
  • ¼ cup coconut oil
  • ¼ cup macadamias
  • ¼ cup coconut flour
  • 2 cups hazelnut meal
  • 1 cup coconut water
  • ½ cup coconut milk
  • ½ cup pure maple syrup
  • 1 tbsp mesquite powder
  • 1 tsp vanilla bean powder
  • 2 tsp baking powder
  • 3 eggs

Frosting:

  • ½ cup cashews
  • ½ cup macadamias
  • ½ cup water
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla bean powder

RECIPE:

  1. Preheat the oven to 160 degrees Celsius, fan-forced.
  2. Line a 12 hole muffin tin with patty pans.
  3. In a high-speed blender, place all cake ingredients. Blend until a smooth consistency.
  4. Divide between the 12 patty pans.
  5. Bake for 40-45 minutes or until just firm on top and allow to cool.
  6. Meanwhile, in a high-speed blender, blend all ingredients for the ‘frosting.’
  7. Top each cake with the desired amount of frosting.
