You don’t have to be a chef to whip up these seriously delightful Chocolate Filled Coconut Cookies! They’re super easy and come without the guilt, so you can make them for everyone you know. Guaranteed to make you the most popular gal in your BFF group!
Coconut cookie:
- 1 cup oats
- ¼ cup coconut flour
- ¼ cup buckwheat flour
- ¼ cup coconut sugar
- ¼ cup desiccated coconut
- 1 tbsp chia seeds
- 1 tsp baking powder
- 1/3 cup melted coconut oil
- ½ cup water (approx)
Chocolate ganache:
- ¾ cup cashews
- 2 tbsp cacao butter
- ¼ cup cacao powder
- 2 ½ tbsp coconut oil
- 2 tsp mesquite
- 1 tsp vanilla bean powder
- ¼ cup coconut sugar
RECIPE:
- Preheat the oven to 170 degrees Celsius.
- Mix together all coconut cookie ingredients in the bowl until well combined. Add the water gradually until the mixture comes together. Use less or more as required.
- Flatten heaped tablespoons of the mixture onto a tray lined with baking paper.
- Bake for about 20 minutes or until golden. Allow to cool.
- Combine all ingredients for the ‘chocolate ganache’ into a high-speed blender. Blend until extremely smooth and creamy.
- Sandwich two biscuits together with the chocolate filling.
