Baked apple oats with salted caramel

The classic combo of oats and apple has just had a makeover! Topped with a healthy salted caramel- this is the ultimate!
Baked oats:
1 cup oats
½ cup water
½ cup coconut or almond milk 
3 tbsp almond meal 
1 apple grated
1 tsp cinnamon
1 ½ tbsp pure maple syrup 
1 egg (1 chia egg if vegan) 
1 tsp baking powder
1 tsp mesquite (optional)
Pinch salt 
1 tsp vanilla extract
Macadamias, to top (optional) 
Salted caramel:
3 tbsp coconut sugar 
1 tbsp coconut milk or almond milk 
Preheat the oven to 150 degrees Celsius, fan-forced.
In a small mixing bowl, place the oats, almond meal, water and milk. Allow to soak for 5-10 minutes. 
Add all other ingredients to the bowl and stir well. 
Divide into 3-4 small ramekins. Bake for 20-30 minutes or until just firm to touch. 
Meanwhile, place the coconut sugar and milk in a small saucepan over low heat until completely dissolved. Pour over the baked oats.
