The perfect healthy alternative for those cold days when you crave crumbles, hot chocolate and pudding!
½ cup oats
½ cup water
½ cup coconut milk
½ large banana, mashed (reserve a few slices for decoration if desired)
1 heaped tsp coconut sugar or honey
1 tbsp cacao
1 tsp cinnamon
1 tsp mesquite (optional)
1 heaped tbsp 100% peanut butter
Coyo or Greek yoghurt, to serve
Cacao nibs, to serve.
On a stovetop over medium heat, cook the oats, water, coconut milk and banana. Bring to a simmer and stir, allowing to thicken.
Remove from heat and stir through the coconut sugar, cinnamon and mesquite.
Pour half of the mixture in a bowl, stirring through the cacao.
Next in a jar or glass, pour a layer of the chocolate oats, then a layer of the caramel oats and a layer of peanut butter. Continue until the oats are filled all the way to the top.
Top with a dollop of coyo or Greek yoghurt and cacao nibs, if desired.
